PROBLEM TO BE SOLVED: To provide an acidic drink which is high in temporal stability of viscosity, although being imparted with viscosity by a thickener, and has an excellent drinking feeling.SOLUTION: Most of polysaccharides used as a thickener are strikingly low in stability of viscosity in acidity. On the other hand, although thickeners high in stability of viscosity are available, they tend to be unfavorable in adhesiveness in drinking feeling, including adhesiveness in the oral cavity and a residual feeling in the throat. Combined use of xanthan gum and tamarind gaum allows imparted viscosity to be retained stably for a long period and provides an acidic drink excellent in drinking feeling and reduced in adhesiveness in the oral cavity and residual feeling in the throat.COPYRIGHT: (C)2016,JPO&INPIT
