The invention relates to a method for purposes of handlingcheese blocks, and a device for this purpose, which inparticular can be assigned to a so-called cassette presswith round or cornered cheese moulds. A rapid reloading ofcheese blocks is to be achieved.For this purpose compressed cheese curd is released fromthe inner wall of a mould (4) and after a turning operationis evacuated from the mould (4), wherein the mould (4) isrotated, lowered and shaken or blown.Before the shaking or blowing operation a pick-up plunger16 retracts into the mould (4) up to the cheese block； themould (4) is then raised, rotated and guided back into thecheese press.The pick-up plunger (16) with the cheese block is thenlowered and the cheese block is fixed in position on thepick-up plunger (16) by means of a clamping unit, isswivelled through 1800 towards a secondary mould (14) andis guided, that is to say, pushed into the latter； theclamping unit is then opened and the pick-up plungerretracts.
