PROBLEM TO BE SOLVED: To provide an oil and fat composition for batter kneading capable of providing fried foods good in dispersibility as well as good in mouth melting and rich flavor with crispy texture, a batter liquid containing the oil and fat composition for butter kneading, and fired foods using the batter liquid.SOLUTION: There is provided an oil and fat composition for batter kneading containing an oil and fat obtained by transesterification of an oil and fat compound consisting of animal oil and/or separated oil of the animal oil and oil and fat containing saturated aliphatic acid having 16 to 24 carbon atoms of 80 mass% or more as a constitutional aliphatic acid at 5 to 35 mass% (oil phase basis) in the oil phase.SELECTED DRAWING: None
