PROBLEM TO BE SOLVED: To provide a technique for extracting a useful substance, by which the substance can efficiently and safely be extracted.SOLUTION: The method for extracting the useful substance comprises supplying an optimal solvent selected from a plurality of solvents to a plant as a raw material in an extraction process, pressurizing the selected solvent in a high pressure state, heating it in the range of room temperature to 160°C, and stepwisely or continuously bringing the raw material into contact with the heated solvent to extract the useful substance. The selected solvent is water or a water-ethanol mixture. The extracted useful substance is cooled and recovered in a pressure-holding state.
