PROBLEM TO BE SOLVED: To solve problems for example, dessert which is produced via heating processing is general dessert, but, when a material formed by processing nuts, is added to the dessert, an aroma component is vaporized and oxidized due to heating, and the aroma forming flavor is reduced.SOLUTION: The aroma component derived from nuts is efficiently captured and held in a commodity, using property of the material itself, and a structure of final product. The product in which, the aroma component derived from nuts is efficiently held, exhibits unique and preferable flavor when one eats the product, and value of the product as a palatable food product significantly increases by improvement of taste quality.SELECTED DRAWING: Figure 1COPYRIGHT: (C)2016,JPO&INPIT【課題】加熱プロセスを経て製造されるデザート類は一般的なものであるが、これにナッツ類を加工した素材を加えた場合、香気成分がその加熱に伴い揮発と酸化を生じ、風味を形成する香気が損じる現象が生じる。【解決手段】ナッツ類に由来する香気成分を、その物質自体の特性、及び最終生産物の構造を利用して商品中に効果的に捕獲、保持させる。ナッツ類に由来する香気成分が効果的に保持された製品は、喫食時に独特の良好な風味を有するようになり、味覚的品質向上による嗜好性食品としての著しい価値の増加を得る。【選択図】図1
