In one aspect, the present invention is directed to a stabilizer composition comprising a mixture of (a) co-attrited microcrystalline cellulose and low or medium viscosity carboxymethylcellulose and (b) high viscosity carboxymethylcellulose produced by the dry blending of components (a) and (b). In other aspects, the present invention is directed an aqueous dispersion comprising such stabilizer composition a method of making such a stabilizer composition as well as to a food, pharmaceutical, nutraceutical or industrial product comprising such a stabilizer composition.Selon un aspect, la présente invention concerne une composition stabilisatrice comprenant un mélange de (a) cellulose microcristalline ayant subi une co-attrition et de carboxyméthylcellulose de viscosité moyenne ou faible et (b) la carboxyméthylcellulose de viscosité élevée produite par le mélange à sec de constituants (a) et (b).
