The present invention relates to a process for the preparation of bread crumb coated non-nuggets-like products in combination with the step of preparing a specific coating paste, especially from rice flour and modified starches, and cooking in a steam oven. This method can be used to obtain nugget-like products having the required crispness, uniformity and color characteristics, and reduced fat content.
