The present invention relates to a meat aging device using a bamboo barrel for aging meat such as beef, pork, chicken, duck, and lamb, and seafood such as flatfish, rockfish, tuna, and shellfish in a bamboo barrel. The present invention comprises: a bamboo barrel having open upper and lower parts, a first step formed by cutting down the inside from the upper part to the middle part of the bamboo barrel, and a second step formed by cutting out a part of the inside from the lower part of the bamboo barrel； a plurality of bamboo shelves each fitted to the first step and the second step； and a fixing part fixing the bamboo shelf fitted to the second step. The bamboo shelf is made in a hollow shape, and the hollow is provided with a plurality of bamboo stands at regular intervals. Meat is placed on the plurality of bamboo stands.
