PROBLEM TO BE SOLVED: To provide a flavor maintaining agent and flavor maintaining method which realize high flexibility of quality design by utilizing original viscoelasticity of a chewing gum and can prevent a chewing gum containing a fruit component at high concentration from loosing flavor at an early stage during chewing, and fruit-containing chewing gum and fruit-containing multilayer chewing gum which have excellent long-term preservability, maintain chewing gum inherent texture and original flavor of fruit and gradually elute flavor of fruit when being chewed so as to maintain the flavor for a long term.SOLUTION: In a flavor maintaining method for a fruit-containing chewing gum, a flavor maintaining agents for fruit-containing chewing gum which are formed of ground materials of a dry fruit, are dispersed in continuous phases of a chewing gum containing a gum base and sugar sweetener.COPYRIGHT: (C)2013,JPO&INPIT【課題】 チューインガム本来の粘弾性を生かした品質設計の自由度が高く、また、果実分を高濃度に含有しているチューインガムが、咀嚼中の早い段階で味抜けすることを防止できる風味持続剤、及び風味持続方法、並びに長期保存性に優れ、また、チューインガム本来の食感、フルーツ本来の風味を保持し、かつ咀嚼したときに、フルーツの風味が徐々に溶出し、長く持続する果実含有チューインガム及び果実含有複層チューインガムを提供する。【解決手段】 乾燥果実の磨砕物からなる果実含有チューインガム用の風味持続剤により達成する。【選択図】 なし
