PROBLEM TO BE SOLVED: To solve a problem that application of using peelings of citrus junos or citrus fruits after processing is limited to spices, Kanroni (dishes boiled in syrup), etc. that can make the best use their flavor, the demand is little, and the majority of them is discarded as industrial waste.SOLUTION: A citrus junos fermented soybean paste of a new concept is produced by: making citrus junos peelings into a paste by a mixer, also making malted rice seasoned with soup soy sauce or the like into a paste by the mixer, and mixing both of them and evaporating moisture while heating and stirring the mixture so as not to be burnt. The citrus junos peelings are used as a raw material for fermented soybean paste, which is indispensable to Japanese eating habits and thereby, great demand for the citrus junos peelings is expected, and the amount discarded as industrial waste is reduced to contribute to the prevention of environmental destruction.COPYRIGHT: (C)2014,JPO&INPIT【課題】柚子や柑橘類は、加工した後の皮を利用する用途が風味を生かした薬味や寒露煮など限られており、その需要が少なくその大半が産業廃棄物として廃棄されていた。【解決手段】柚子皮をミキサーでペースト状にして、出汁醤油などで味をつけた麹もミキサーでペースト状にして、双方を混ぜ合わせて、その混合物を熱を加えて焦付かないようにかき混ぜながら水分を蒸発させて、新しい発想の柚子味噌を作る。日本人の食生活に欠かせない味噌の原料にすることによってその需要が多く見込まれ、産業廃棄物として廃棄処理する量を減少させることによって、環境破壊防止に貢献できる。
