PROBLEM TO BE SOLVED: To provide a beverage, good in flavor, manufactured by a manufacturing process good in stability for the beverage and its process by which, in the beverage containing an emulsifying agent and fat, the homogenized pressurization in a homogenizing process is processed by 10 MPa or less, and the average particle size of the contained fat is made to be 1 to 10 μm because the beverage is distributed in various conditions in these days when the form of selling is developed, and various phenomena for deteriorating commercial values occur and become a problem in many cases in which an emulsified state of the fat becomes unstable during preservation and creaming due to floating of the milk fat is created, and the floating of oil droplets, and the like, due to aggregated solidification of the milk fat and the emulsification destruction occur.SOLUTION: In the manufacturing process for a beverage containing an emulsifying agent and a fat, the homogenized pressurization in the homogenizing process is processed at 10 MPa or less.COPYRIGHT: (C)2013,JPO&INPIT【課題】販売形態が発達した現代では、飲料は様々な条件にて流通されるが、保存中油脂の乳化状態が不安定になり乳脂肪分の浮上によるクリーミングの発生、乳脂肪分の凝集固化、乳化破壊による油滴の浮上等商品価値を低下させる様々な現象が発生し問題となることが多い。本発明は乳化剤及び油脂を含有する飲料にあって、均質化工程の均質加圧を10MPa以下で処理し、含有する油脂の平均粒子径を1μm~10μmとすることで風味がよく、且つ安定性の良い飲料の製造工程及びその工程により製造された飲料を提供することを課題とする。【解決手段】本発明者らは、乳化剤及び油脂を含有する飲料の製造工程にて、均質化工程の均質化圧を10MPa以下で処理することで課題を解決する。【選択図】なし
