The type of the fat-soluble vitamin composition of the present invention has no special restriction, provided that the contained fat-soluble vitamin contact with potassium carboxylate, such as fat-soluble vitamin composition formed by dispersing fat-soluble vitamin in potassium carbonate, fat-soluble vitamin composition of in oil-in-water type emulsified composition, powdered fat-soluble vitamin composition formed by drying oil-in-water type emulsion composition and so on. Further, even if the obtained composition containing fat-soluble vitamin is blended into food and drink, the reduction amount of fat-soluble vitamin can also be inhibited.提供改善安定性之含有脂溶性維他命之組成物，於脂溶性維他命含有碳酸鉀，則所得含有脂溶性維他命之組成物改善脂溶性而抑制維他命之含量降低。本發明之脂溶性維他命組成物只要使脂溶性維他命與碳酸鉀接觸地含有即可，至於含有脂溶性維他命之組成物之形態無特別限制，可例示於脂溶性維他命分散碳酸鉀之脂溶性維他命組成物、水中油型乳化組成物狀脂溶性維他命組成物、將水中油型乳化組成物乾燥之粉末狀脂溶性維他命組成物等。又可將所得含有脂溶性維他命之組成物配合於飲食品等也可降低脂溶性抑制維他命之含量。
