The present invention relates to a nutritious Korean sausage Sundae with quail eggs and a manufacturing method thereof. Specifically, Korean sausage Sundae with quail eggs rich in protein and essential amino acid has been manufactured. As a result, it has been verified that the Korean sausage of the present invention shows significant palatability in all of taste, texture, flavor, appearance and overall preference than common Korean sausage free from quail eggs. Accordingly, it has been verified that the Korean sausage with quail eggs of the present invention is easily accessible to consumers who have felt distaste for common Korean sausage.
