PROBLEM TO BE SOLVED: To provide a method for reinforcing a fruit juice feeling capable of reinforcing a fruit juice feeling while reducing the unpreasant tastes such as bitterness and astringency of a fruit juice, and a fruit juice feeling-reinforced composition.SOLUTION: There is provided a method for reinforcing a fruit juice feeling by the addition of a high sweetness sweetener, inositol and an acidulant to a fruit juice, and also provided is a fruit juice feeling-reinforced composition containing: a high sweetness sweetener inositol and an acidulant. As the high sweetness sweetener, a Momordicae grosvenori extract is most preferable since it is a sweetener derived from a fruit juice, thus has a good compatibility with a fruit juice, and is excellent in an effect of improving the fruit juice feeling of a fruit juice. As the acidulant, citric acid, when being jointly used with inositol, in which only acidity having strong irritation is masked and showing a fresh taste is most preferable.SELECTED DRAWING: Figure 1COPYRIGHT: (C)2018,JPO&INPIT【課題】果汁が持つ苦みや渋み、収斂味等の雑味を低減しつつ果汁感を増強させることができる果汁感増強方法及び果汁感増強組成物の提供。【解決手段】果汁に高甘味度甘味料とイノシトールと酸味料とを添加することによる果汁感増強方法、及び高甘味度甘味料とイノシトールと酸味料とを含有する果汁感増強組成物。高甘味度甘味料としては、果実由来の甘味料であるため果汁との相性が良く、果汁の果実感を向上させる効果に優れるため、ラカンカ抽出物が最も好ましい。酸味料としては、イノシトールと併用した場合に、刺激の強い酸味のみがマスキングされ、爽やかな味質を呈するクエン酸が最も好ましい。【選択図】図1
