The present invention relates to a preparation method of a leaching tea comprising fermented and matured Acanthopanax, wherein the method comprises the steps of: sorting out and washing leaves, stems and roots of Acanthopanax without any special additives; naturally drying the same; fermenting the dried; grating the fermented; fermenting and maturing the product obtained from the previous step; and roasting and heat-treating the product obtained. According to the invention, the fermented product obtained from the above processing passes through a refined pulverization process and a mixing process, followed by a tea bag package process, thus resulting in a leaching tea, wherein a characteristic bitter and astringent tastes of Acanthopanax is removed, the flavor thereof is maintained and the function thereof is enhanced.본 발명은 오가피의 잎,줄기 및 뿌리를 별도의 첨가물 없이 각각의 정리,세척단계,자연건조,발효단계,유념단계,숙성발효단계 및 덖음열처리단계 등의 가공공정을 통하여 발효시킨 후 조분쇄공정과 배합공정를 거쳐 티백포장공정에 의해 침출 차를 제조하여 오가피 특유의 쓴맛과 떫은 맛을 제거하면서 향미를 유지하고 그 기능을 향상시킬 수 있게 한 것을 특징으로 한다.
