PROBLEM TO BE SOLVED: To provide a method for producing a processed food of vegetable and/or fruit, having a small grain diameter and containing more water insoluble dietary fiber.SOLUTION: A method for producing a processed food of vegetable and/or fruit includes the following steps (A) and (B): (A) a step of adding plant tissue collapse enzyme of 1-100 mass% of a water insoluble dietary fiber mass contained in vegetable and/or fruit to the vegetable and/or fruit followed by enzyme treatment for 1-45 minutes; and (B) a step of performing for the vegetable and/or fruit after enzyme treatment, high-pressure homogenizer treatment by pressure of 5-120 MPa, or shear treatment using a rotary cutter type device having at least two blades or multilayer comb teeth.SELECTED DRAWING: NoneCOPYRIGHT: (C)2016,JPO&INPIT
