The present invention relates to a method for a heat extraction process of tea, including the following steps of: (A) Taking an amount of tea leaves which weighs X and legg-cutting the tea leaves. (B) Cleaning and drying the tea leaves which are legg-cut. (C) Immersing the tea leaves dried in a boiling water which weighs Y and is 100 degrees Celsius so as to dissolve a part of components from the tea leaves in the boiling water. (D) removing the tea leaves which is immersed in the boiling water to get an aqueous solution which includes the components from the tea leaves. (E) Adding a first solvent to the aqueous solution which includes the components from the tea leaves to form a first polymeric substance which includes the components from the tea leaves and the acid radical ion of the first solvent and removing the water. (F) Adding a second solvent into the first polymeric substance to make the acid radical ion react with the second solvent to form a second polymeric substance.(G) Removing the second polymeric substance which is formed by the acid radical ion and the second solvent to isolate tea extract which weighs Z.本發明關於一種茶葉熱萃取製程,其包括以下步驟:(A)取重量為X之茶葉切菁;(B)將切菁後之茶葉清洗並乾燥;(C)將乾燥後之茶葉浸泡於重量為Y且溫度概為攝氏100度的沸水中,以將部分茶葉之成分溶解於沸水中;(D)將浸泡過之茶葉去除,以取得一含有茶葉成分之水溶液;(E)於該含有茶葉成分之水溶液中加入一第一溶劑,以形成一茶葉成分與該第一溶劑之酸根離子之第一聚合物,並將水去除;(F)加入一第二溶劑,使酸根離子與該第二溶劑反應以形成一第二聚合物;(G)將該酸根離子與該第二溶劑所合成之第二聚合物去除,即離析出重量為Z之茶葉萃取液。A~G‧‧‧步驟
