Compositions comprising ergothioneine and a trimethylamine absorber areprovided. Also provided are methodsfor preventing, reducing or minimizing the fishy, amine odor, due totrimethylamine, that is associated with the processing and/orstorage of a preparation containing ergothioneine, by combining with theergothioneine, during processing or prior to storage, atrimethylamine absorber in an amount sufficient to prevent the detection ofany trimethylamine odor by the human nose. Amethod is further provided for ameliorating the methylamine odor associatedwith an aqueous ergothioneine-containing preparationafter it has developed a fishy trimethylamine odor.
