PROBLEM TO BE SOLVED: To provide a production method of noodles in which a noodle dough containing wheat bran is rolled into a noodle strip, and the noodle strip is cut out into noodle lines, and the noodle lines are cut into a desired length, which is the production method of noodles excellent in noodle-making workability, capable of obtaining noodles having excellent resilience.SOLUTION: There is provided a production method of wheat bran-containing noodles in which a noodle dough containing steam-treated wheat bran is rolled into a noodle strip, and the noodle strip is cut out into noodle lines, and the obtained noodle lines are cut.
