The present invention provides a method for preparing a farm-raised freshwater eel soup that is a safe food. The method includes the following steps of: (1) preparing environment-friendly freshwater eel； (2) mixing 10-20 wt% of the environment-friendly freshwater eel prepared in the step (1), 10 wt% of a bone of the freshwater eel, 5 wt% of a skin of pollack, 5 wt% of Saururus chinensis bail, 2 wt% of garlic, 1 wt% of ginger, and 0.5 wt% of peppers with respect to 100 wt% of water, boiling the mixture at a temperature of 100C during 34 to 36 hours, and filtering remainders through a colander to prepare meat broth of the eel； (3) preparing marinade by mixing 100 wt% of red pepper powder, 15-30 wt% of red pepper paste, 5 wt% of cooking wine, and 10 wt% of soju with respect to 100 wt% of the meat broth of the skin of pollack prepared by pouring water into a mixture, in which kelp, anchovy, skin of pollack, onion, and radish are mixed in a weight ratio of 1:1:1:1:2, with the same weight ratio and boiled for one to two hours； and (4) completing the freshwater eel soup by mixing 20 wt% of dried radish leaf, 5 wt% of soybean paste, and 1-5 wt% of marinade prepared in the step (3) with respect to 100 wt% of the meat broth of the eel prepared in the step (2).본 발명은 친환경 민물장어를 준비하는 단계(1), 물 100 중량부에 대하여 상기 (1)단계에서 준비한 친환경 민물장어 10 내지 20 중량부, 친환경 민물장어 뼈 10 중량부, 명태껍질 5 중량부, 삼백초 5 중량부, 마늘 2 중량부, 생강 1 중량부, 통후추 0.5 중량부를 혼합하여 100℃에서 34 내지 36시간 끓이고 체에 밭쳐 찌꺼기를 제거하여 장어 육수를 준비하는 단계(2), 다시마, 멸치, 명태껍질, 양파, 무를 1:1:1:1:2의 중량비로 혼합한 혼합물에 물을 같은 무게로 부어 1 내지 2시간 끓인 명태껍질육수 100 중량부에 대하여 고춧가루 100 중량부, 고추장 15 내지 30 중량부, 맛술 5 중량부, 소주 10 중량부, 를 혼합하여 양념장을 준비하는 단계(3), 상기 (2)단계의 장어육수에 100 중량부에 대하여 시래기 20 중량부, 된장 5 중량부, (3)단계에서 준비한 양념장을 1 내지 5 중량부로 혼합하여 민물장어탕을 완성하는 단계(4)로 이루어지는 것을 특징으로 하는 안전양식 민물장어탕의 제조방법을 제공한다.
