PROBLEM TO BE SOLVED: To provide a beer taste beverage having enhanced richness with improved mildness, and manufacturing method thereof.SOLUTION: The beer-taste beverage includes 0.2 g/100 cm3 or less of an extract derived from barley, water-soluble dietary fiber, and 0.001 to 0.05 mass% of quillaja saponin or 0.01 to 0.05 mass% of soybean saponin. The manufacturing method of the beer-taste beverage includes adding a raw material derived from barley such that the final product has an extract derived from barley with a content of 0.2 g/100 cm3 or less, adding water-soluble dietary fiber, and adding quillaja saponin such that the final product has a content thereof of 0.001 to 0.05 mass%, or adding soybean saponin such that the final product has a content thereof of 0.01 to 0.05 mass%, in at least one of a pre-fermentation process, a fermentation process, and a post-fermentation process.COPYRIGHT: (C)2015,JPO&INPIT
