PROBLEM TO BE SOLVED: To provide a method for producing a purified peptide product having a tripeptide Gly-X-Y content of 40% or higher in a manner suitable for mass-production from a peptide mixture such as an enzymatically digested and purified gelatin or collagen product (e.g., a peptide mixture having a tripeptide Gly-X-Y content of 2 to 35%).
SOLUTION: A method for producing a purified peptide product having a higher tripeptide Gly-X-Y content than the below-mentioned peptide is provided which comprises bringing a peptide mixture containing a tripeptide Gly-X-Y (wherein Gly-X-Y is an amino acid sequence and X and Y are amino acid residues other than Gly) into contact with an ion-exchange resin to allow the resin to adsorb the tripeptide Gly-X-Y and eluting the tripeptide Gly-X-Y from the ion-exchange resin with the adsorbed tripeptide Gly-X-Y.
