Liver is the vital organ of the body detoxification and metabolism, and the two main reasons for liver disease are alcoholism and hepatitis C virus infection. With the increase of global alcohol consumption, it making the incidence of alcoholic liver disease increased significantly, this mechanism is closely related to the production of free radicals, so prevention or mitigation of alcoholic liver injury of antioxidant food nutritional medicine is to become an important issue. Our invention use alcohol liquid diet feeding trials to induce rat chronic alcoholic hepatitis, and then feed by black garlic, and to determine the feeding black garlic whether the maintenance of liver function by liver and blood biochemical activity tests. Results show that the control and experimental groups due to the daily ingestion of alcoholic diet, plasma transit aspartic acid aminotransferase (AST), alanine aminotransferase (ALT) enzyme activity with the increase of the feeding cycle improved experimental group fed the black garlic, along with the improvement of each group dose has the effect of decreasing the value of the blood biochemical activity. In addition, the feeding of black garlic group were significantly than the control group had a lower glycogen content of the trend. Reduced plasma ALT and AST activities from feeding black garlic in fact, the glycogen content decreased (glycogenolysis) and also provide the energy to repair liver damage. Alcoholic liver injury in rats feeding black garlic, increase alcoholic liver disability rat liver anti-oxidative enzymes GPX activity in the performance of its catalytic decomposition of hydrogen peroxide and lipid hydroperoxides and consumption of GSH content, so the group of black garlic GSSG content significantly higher than the control group.
