An apparatus and method are provided for curing canola. The canola is exposedto a temperaturecycle with a period of 22 to 26 hours with the moisture content of the canolamaintained at 11-13%.The curing process is carried out in a closed environment in a curingapparatus with aninsulated exterior shell, an inner container to hold the canola, a humidifierand a heater. Ablower is provided to circulate air in the apparatus, and the inner containerincludes means toprovide movement of the canola.
