PROBLEM TO BE SOLVED: To provide a PI having further improved dispersiveness and/or solubility into water and a preparation method thereof since, although a conventional PI having high usefulness in biofunction may be excellently distributed into water due to its amphipathicity, dispersiveness and solubility is not sufficient upon distribution into water.SOLUTION: It is found that PI having an excellent solubility is prepared by the following processes that: phospholipid mixture containing PI is reacted with PLB phospholipid other than PI such as PC, PE and phosphatidic acid (sometime abbreviated as PA, hereinafter) is selectively hydrolyzed PI is extracted from the enzyme reaction product with organic solvent under the presence of inorganic salt and chelating agent upon extraction of remaining PI with the organic solvent.COPYRIGHT: (C)2015,JPO&INPIT【課題】生体機能にとって有用性が高いPIは両親媒性のために水に対して良好に分散できるものの、水系に分散させた時の分散性や溶解性が不十分であった。したがって、水系への分散性および/または溶解性が更に向上したPI及びその調製方法が求められていた。【解決手段】PIを含有するリン脂質混合物にPLBを作用させ、PC、PEやホスファチジン酸(以下、PAと略すこともある)等のPI以外のリン脂質を選択的に加水分解した後、残存したPIを有機溶媒で抽出する際に、無機塩及びキレート剤の存在下で酵素反応物から有機溶媒でPIを抽出することで溶解性に優れたPIを調製することができることを見出した。【選択図】なし
