PROBLEM TO BE SOLVED: To provide new soup extraction technique for efficiently producing a non-emulsified soup liquid and an emulsified soup liquid in respective stages by using food materials generally used for business as they are without adding neither special processing nor additives, etc.SOLUTION: A pressure cooker is constituted by freely openably mounting a pressure tight lid 15 onto the upper end opening 13 of an extraction pot 11. A liquid supply valve 40 is arranged on an outer peripheral wall 14 close to the upper end opening 13 of the extraction pot 11. The upper end of ascending tube 5, which is extended upward from the immediately upper neighborhood of an inner bottom wall 12 in the extraction pot 11, is connected to the liquid supply valve 40, and a liquid supply mechanism 4, which is connected to the supply end side of the liquid supply tube 6, is incorporated at the external end of the liquid supply valve 40, thereby to obtain the pressure cooker 10 for soup extraction.
