The present invention relates to a low salt powder for food additives obtained by fermenting halophyte, and a production method thereof. Especially, the present invention relates to a food material which meets market demands for increasing or suppressing salty taste due to sweetness, sourness, and oiliness. To this end, Spergularia marina and Angelica Utilis Makino with high content of edible salt are bio-converted by lactic acid bacteria so as to carry out a lactic acid fermentation of inherent components of the plants, thereby enabling production of low salt powder containing components obtained via bio-conversion of natural components such as organic acid and amino acid.본 발명은 염생식물을 발효하여 만든 식품첨가용 저염분말 및 그 제조방법에 관한 것으로서, 특히, 식염의 함량이 높은 함초 및 세발나물을 젖산균으로 생물 전환하여 식물 고유성분을 젖산 발효시킴으로써 유기산과 아미노산 등 천연성분을 생물전환한 성분이 포함된 저염분말을 제공함으로써 단맛, 신맛, 지미에 의한 짠맛 상승 또는 억제를 요구하는 시장 요구에 부응한 식품 소재에 관한 것이다.
