PROBLEM TO BE SOLVED: To quickly dry an undried salami subjected to the smoking treatment, especially fat undrying salami without causing the drying unevenness between the inside and near the surface.SOLUTION: An electric current is applied to undried salami placed under decompression, and fall of temperature caused by evaporation of contained moisture is compensated by Joule heat of current application so that contraction of meat due to fall of temperature is inhibited, and passing of water vapor from the inside of the undried salami to near the surface side is improved. Thus, contraction of meat near the surface due to excessive drying is inhibited so that drying is quickly performed without causing drying unevenness between the inside and near the surface.COPYRIGHT: (C)2013,JPO&INPIT【課題】燻煙処理を施した未乾燥サラミソーセージ、特に太物の未乾燥サラミソーセージを、内部と表面近くとで乾燥ムラを生じさせることなく、速やかに乾燥させる。【解決手段】未乾燥サラミソーセージを減圧下に置きながら通電し、含まれている水分の蒸発によって生ずる温度の低下を通電によって生ずるジュール熱で補って温度の低下による肉の収縮を阻止し、未乾燥サラミソーセージの内部から表面側への水蒸気の通りを良好にし、表面近くの肉の乾燥の進み過ぎによる収縮を阻止し、内部と表面近くとで乾燥ムラが生じさせることなく速やかに乾燥させる。【選択図】図1
