The present invention relates to mutants of lactic acid bacteria that have been found to be resistant to the antibiotic ampicillin and to improve texture when grown in milk while retaining other growth characteristics of the parent strain. The present invention further relates to a culture containing such a mutant and to a dairy product fermented with the ampicillin resistant lactic acid bacteria.本発明は、乳酸菌の変異体であって、抗生物質アンピシリンに耐性で、かつ、乳中で増殖させると親株の他の増殖特性を保持しながら質感を向上させることが発見された変異体に関する。本発明は、さらに、このような変異体を含む培養物、および当該アンピシリン耐性乳酸菌を用いて発酵させた乳製品に関する。
