PROBLEM TO BE SOLVED: To provide chocolate dried fast after coating, having a good luster and flavor and less cracking or stickiness to the hand, and particularly suitable for use in a retail bakery.SOLUTION: Chocolate contains, in oil and fat of the chocolate, 41-97 mass% of lauric oil and fat, and 3-21 mass% of non-lauric oil and fat hydrogenated oil with at least 30 mass% of trans fatty acid content. The chocolate preferably contains at least 25 mass% of palmitate content of the non-lauric oil and fat hydrogenated oil. The chocolate further contains, in the oil and fat of the chocolate, non-lauric oil and fat extremely-hydrogenated oil and/or non-lauric oil and fat liquid oil.
