PROBLEM TO BE SOLVED: To provide a bitter taste inhibitor that can effectively suppress an unpleasant bitter taste.SOLUTION: The bitter taste inhibitor contains a eucommia ulmoides extract as an active component, wherein the intensity of bitter taste of a composition having the bitter taste is 7 or less based on a quinine sulfate standard solution.
