PROBLEM TO BE SOLVED: To provide fermented cake-like baked confectionery and a manufacturing method of confectionery using thereof, without using yeast.SOLUTION: Baked confectionery having a fermented cake-like internal phase structure and texture is provided by heating and boiling oil and fat and water, adding grain flour after stopping the heat, adding egg and mixing evenly, adding meringue more than 10% by weight in the dough before baking so that saccharide added as the meringue is less than 10% by weight in the dough before baking, and forming and baking. Savarin-like cake can be manufactured by impregnating the baked confectionery with syrup, and French toast-like cake can be manufactured by impregnating the baked confectionery with egg liquid and baking.COPYRIGHT: (C)2015,JPO&INPIT【課題】イーストを使わずに、発酵菓子風の焼菓子およびこれを用いた菓子類の製造方法を提供すること。【解決手段】油脂類と水を加熱沸騰させ、火を止めて穀粉類を加え、卵類を加えて均一に混合し、さらにメレンゲを焼成前生地中10重量%以上、特にメレンゲとして加える糖類が焼成前生地中10重量%以下となるように加え成形、焼成することで、発酵菓子風の内相組織と食感を有する焼菓子が得られる。これをシロップに含浸することでサバラン風菓子、卵液に含浸し焼成することでフレンチトースト風菓子が製造できる。【選択図】なし
