PROBLEM TO BE SOLVED: To provide a method for safely reducing the acidity of foods and beverages at low cost, without damaging palatability and an acidity reducing agent for use in the method.SOLUTION: The acidity reducing agent includes a yeast extract or a branched-chain amino acid mixture as active ingredient. The acidity reducing agent can effectively reduce the acidity of various foods without imparting the taste derived from the active ingredient.
