Provided are a method for producing an oyster hydrolysate and a peptide isolated therefrom. The oyster hydrolysate produced by the production method increases production of procollagen type-1 while inhibiting biosynthesis of matrix metalloproteinase-1 (MMP-1), thereby being useful as cosmetic compositions or functional health foods for wrinkle amelioration. To this end, the method for producing the oyster hydrolysate comprises the following steps: carrying out a hydrolysis reaction by putting protease into oyster; and adding glucose and yeast after the hydrolysis reaction and then conducting fermentation thereafter.본 발명은 굴 가수분해물 제조방법 및 이로부터 분리된 펩타이드를 제공하는 것으로서, 상기 제조방법에 의해 제조된 굴 가수분해물은 프로콜라겐 타입-1의 생성을 증가시키고, MMP-1의 생합성을 저해시키는 효과가 있어 주름개선용 건강기능식품 또는 화장료 조성물로 유용하게 사용될 수 있다.
