PROBLEM TO BE SOLVED: To provide microcapsules having a high content of a fat-soluble active substance and a desirable low content of free surface fat which can be used for, e.g., food and tablets containing an active substance； and a process for preparation thereof.SOLUTION: The invention relates to a microcapsule comprising 30 to 60% of at least one fat-soluble active substance selected from provitamins, vitamins and esters thereof, monounsaturated fatty acids, polyunsaturated fatty acids (PUFA's), carotenoids and benzoquinones, where the ratio between the fat-soluble active substance and the hydrocolloid is at least 5:1, and optionally comprising one or more other matrix components.
