The invention relates to a method of producing a low potassium fruit juice which provides vasorelaxation, NADPH-oxidase mediation and repeated infection reduction characteristics and more particularly a method of producing a fruit juice which is suitable for consumption by patients suffering from progressive kidney failure including end stage renal failure who are placed on a restricted potassium diet.
