The present invention is directed to a technology that allows efficient removal of fructan from grain material. The method according to the invention utilizes a seed starter or a microbial starter to decrease the fructan content. Said seed starter is generated from grain material having a low content of damaged starch. The obtained grain material has fructan content significantly lower compared to the starting situation. This low-fructan grain material can be used in producing low-fructan grain ingredients and products suitable e.g. for low- FODMAP diet, and also various cereal food products with dietary benefits. The present invention is also directed to products containing low-fructan grain ingredients.La présente invention concerne une technologie qui permet à l'élimination efficace de fructane de matériau à base de grains. Le procédé selon l'invention utilise un starter d'ensemencement ou un starter microbien pour réduire la teneur en fructane. Ledit starter d'ensemencement est produit à partir de matériau de grains ayant une faible teneur en amidon endommagé. Le matériau à base de grains obtenu a teneur en fructane significativement inférieure à celle de la situation de départ. Ce matériau à base de grains à faible teneur en fructane peut être utilisé dans la production d'ingrédients à base de grains à faible teneur en fructane et de produits appropriés, par exemple, pour un régime alimentaire à faible teneur en FODMAP, et également divers produits alimentaires céréaliers avec des avantages diététiques. La présente invention concerne également des produits contenant des ingrédients à base de grains à faible teneur en fructane.
