PROBLEM TO BE SOLVED: To provide a food improved in chewing and retention characteristics in the mouth.

SOLUTION: A method for producing the food comprises a series of processes of mixing a crushed food material or its processing residue, or formed food gel with a substance made from at least one component selected from among an unformed gelling agent, i.e., gellan gum, galactomannan, glucomannan, xyloglucan, agar, xanthan gum, gelatin, and alginic acid or its salt, in a solution or a dispersion liquid containing the substance, with the latter substance gelatinized, and drying the product. Food items improved in chewing and retention characteristics in the mouth and produced by the method is also provided.
