PROBLEM TO BE SOLVED: To provide a method in which a processing method of a citrus fruit is reassessed, and a production method is developed together with a taste, while retaining a flavor component, and simultaneously a part of pulp or white skin discarded hitherto is utilized.SOLUTION: There is provided a processing method of a white skin of a citrus fruit having the white skin, a pulp and fruit juice.
