This invention provides glycosyl ceramide formation which is suitable for functional food and medicine etc. and has stable quality, and from which impurities such as sterol glycoside are removed. The problem to be solved is to produce glycosyl ceramide formation at low cost by using raw materials which are edible, safe and easy to procure. The residue of yeast after yeast extract extracted from such as torula dried yeast is used as a raw material and the residue is extracted with organic solvent such as alcohol to produce the glycosyl ceramide formation.
