PROBLEM TO BE SOLVED: To provide an oil and fat solidifying agent capable of thickening or gelatinizing oils and fats by addition of a small amount and suppressing separation of the oils and fats over a long period of time, and oils and fats containing the oil and fat solidifying agent.SOLUTION: The oil and fat solidifying agent contains a polyglycerol fatty acid ester in which an average polymerization degree of the polyglycerol is eicosamer to tetracontamer, behenic acid accounts for &ge60% of all constituent fatty acids, the constituent fatty acids include (A) at least one 16-22C straight chain saturated fatty acid and (B) at least one selected from the group consisting of 8-14C straight chain saturated fatty acids, 18-22C branched fatty acids and 18-22C unsaturated fatty acids, a molar ratio of (A):(B) is 0.91:0.09 to 0.99:0.01, and an esterification rate is &ge70%.COPYRIGHT: (C)2012,JPO&INPIT【課題】本発明は、少量の添加で油脂を増粘、ゲル化することが可能であり、油脂の分離を長期間抑えることができる油脂固化剤及び油脂固化剤を含有する油脂を提供することを目的とする。【解決手段】ポリグリセリンの平均重合度が20~40量体であり、構成脂肪酸は、全構成脂肪酸の内60%以上がベヘン酸であり、且つ(A)炭素数16~22の直鎖飽和脂肪酸を少なくとも1種類以上、(B)炭素数8~14の直鎖飽和脂肪酸、炭素数18~22の分岐脂肪酸及び炭素数18~22の不飽和脂肪酸からなる群より選ばれた少なくとも1種類以上を含み、(A):(B)のモル比が、0.91:0.09~0.99:0.01であり、且つエステル化率が70%以上であるポリグリセリン脂肪酸エステルを含有することを特徴とする油脂固化剤を用いることにより上記課題を解決する。【選択図】なし
