The present invention provides a method for extracting antioxidant ingredients from Chenopodium formosanum Koidz. seeds, in which an aqueous ethanol solution is used as an extract solution to extract antioxidant ingredients of Chenopodium formosanum Koidz. seeds. The method of the present invention allows for adjustment of concentration of the aqueous ethanol solution according to the antioxidant ingredients to be extracted in order to increase the amount of the antioxidant ingredients to be extracted. Opposite to the conventional way of extracting Chenopodium quinoa seeds with a methanol solution that has high toxicity and damages human body, the present invention uses an aqueous ethanol solution that is not toxicant and allows for effectively extracting the antioxidant ingredients.本發明提供一種臺灣藜種子中萃取抗氧化成份之方法,其主要係利用乙醇水溶液作為萃取液,以萃取臺灣藜種子中萃取抗氧化成份。本發明之方法可依所需萃取之抗氧化成分而調整乙醇水溶液的濃度,以提升所需萃取的抗氧化成分的量。相較於過去使用甲醇溶液萃取藜麥種子,具有毒性高而危害人體之問題,本發明之方法使用乙醇水溶液並不具有毒性,並可有效萃取抗氧化成分。
