PROBLEM TO BE SOLVED: To provide a method for drying non-fried noodles in order to obtain non-fried noodles preventing noodle ribbons from binding each other, easy to become loose, and excellent in reconstitutability.SOLUTION: A drying step of drying non-fried noodles includes a step of charging pregelatinized noodle ribbons into a retainer which has small holes in the bottom, the total area of which is ≤30% of the area of the bottom, or a retainer which has no small holes in the bottom, i.e., a retainer with an opening ratio of 0-30%, and spraying high-speed air current, preferably air current of ≥50 m/s wind velocity to the noodle ribbons on the retainer from above the retainer.【課題】 本発明は、麺線同士の結着がなく、ほぐれやすく、復元性に優れたノンフライ麺を得るためのノンフライ麺の乾燥方法を提供することを課題とする。【解決手段】 ノンフライ麺の乾燥工程において、底面に小孔を有し該小孔の総面積が前記底面の面積の30%以下、又は底面に小孔を有さないリテーナ、すなわち開口率が0~30%のリテーナにα化処理された麺線を投入し、このリテーナの上方からリテーナ上の麺線に高速の気流、好ましくは風速50m/s以上の気流を吹き付ける工程を含む。【選択図】 なし
