A method of preparing fermented sponge gourd juice is disclosed. The method comprises: providing a fermenting substrate containing a sponge gourd juice; and fermenting the fermenting substrate by Weissella cibaria WC0630 at 30-37℃, pH 5-6 for 20-24 hours. The Weissella cibaria WC0630 is deposited at Bioresource Collection and Research Center of Taiwan with a deposit number BCRC 910767. Accordingly, the fermented sponge gourd juice rich in peptides and polysaccharides can be obtained.一種絲瓜醱酵液的製備方法,係包含:提供一醱酵基質,該醱酵基質包含一絲瓜原液;及於30~37℃、pH 5~6之條件下,以一魏斯特菌WC0630醱酵該醱酵基質20~24小時;其中,該魏斯特菌WC0630係寄存於中國臺灣食品工業發展研究所,其寄存編號為BCRC 910767;據此,可以獲得富含有胜肽及總多醣的絲瓜醱酵液。
