PROBLEM TO BE SOLVED: To provide a production method of pressure sensitive microorganisms which is for example capable of killing microorganisms by pressure treatment at a pressure value which does not ruin advantage of unheated sterilization; a production method of fermented foods which uses the pressure sensitive microorganisms produced by the production method; fermented foods which are produced using the pressure sensitive microorganisms produced by the production method; and a method for killing microorganism of the fermented foods which are produced by using the pressure sensitive microorganisms.SOLUTION: This technique screens growth-delayed microorganisms which formulate a colony later than a prescribed period out of microorganisms which multiply and formulate colonies after the pressure treatment at the lower pressure value than the pressure value assumed to be killing microorganisms with respect to wild microorganism strain or microorganism strain with mutation treatment.
