The invention relates to a process for preparing fructose syrup from plant material-based inulin, as a food supplement for bees during the winter season and the periods when they cannot collect their food. According to the invention, the process consists, in a first stage, in mincing the plant material and mixing it with water in a 1:1 ratio, then homogenizing the same in a piston homogenizer, at high-pressure, in two cycles of 50 MPa, separating by filtration the unsolubilized lignocellulosic material from the solution which includes plant material hydrosoluble components, inulin included, followed by the hydrolysis of the inulin in the solution by adding an inulase and the separation of the fructooligosaccharides from proteins and the other biopolymers in the solution, by tangential ultrafiltration, and, further on, by the hydrolysis of the fructooligosaccharides in the permeate using a column which contains inulase immobilized on a polymeric nanofibres network.
