PROBLEM TO BE SOLVED: To provide an extruded noodle which is boiled within a short period of time or has good restorability, and allows texture without a sense of discomfort when eating the same.SOLUTION: There is provided the extruded noodle having a hole 2 which passes through in the longitudinal direction. In the extruded noodle, the hole 2 is closed or contracted when the noodle is boiled or reconstituted in hot water.
