The present invention relates to a vegetable brining apparatus for reducing brining time, and more specifically, to a vegetable brining apparatus which can simply brine vegetables for kimchi in a short period of time, thereby reducing production costs and improving productivity. The apparatus comprises: a brining chamber into which a material to be brined and salt water are introduced for brining； a salt water supply device for feeding salt water into the brining chamber； a salt water circulation line connected to the brining chamber for circulating the salt water； and a salt water heating device for heating the salt water circulating in the salt water circulation line. According to the present invention, the vegetables are brined faster by heating the salt water using the salt water heating device, and therefore, even a small-scale brining facility can produce a large amount of brined vegetables. Accordingly, the reduction in the costs of brining facilities leads to the reduction in the production costs of brined vegetables, and therefore, the brined vegetables can be supplied to consumers inexpensively. Moreover, the apparatus of the present invention allows the brining facilities to easily manage the seasons of high demand for brined vegetables, such as the kimchi-making season without increasing investment in the facilities.본 발명은 절임시간 단축형 채소 절임장치에 관한 것으로서, 더욱 상세하게는, 김치의 주원료인 채소의 절임공정을 단시간 내에 간결하게 수행할 수 있도록 함으로써 제조원가를 절감할 수 있고 생산성을 향상시킬 수 있는 절임시간 단축형 채소 절임장치에 관한 것이다.본 발명에 따른 절임시간 단축형 채소 절임장치는 채소 절임장치에 있어서, 절임대상물과 염수가 투입, 수용되어 절임과정이 수행되는 절임조； 상기 절임조로 염수를 공급하는 염수공급장치； 염수가 순환되도록 상기 절임조에 연결되는 염수순환라인； 및 상기 염수순환라인으로 유동되는 염수를 가온시키는 염수가온장치를 포함하는 것을 특징으로 한다.이에 따르면, 염수가온장치를 이용하여 염수를 가온하여 절임공정을 수행하므로 채소의 절임시간을 현저히 단축시킬 수 있다. 이에 따라 절임시설을 소규모로 구성하더라도 절임채소의 생산량이 현저히 증대되므로 시설투자비가 절감되고, 절임채소의 생산원가가 낮아져 소비자의 비용부담을 줄일 수 있는 효과가 있다. 아울러, 절임배추의 수요량이 급격하게 늘어나는 김장철 등과 같은 시기에도 별도의 시설투자 없이 적절하게 대응할 수 있는 장점이 있다.
