A process of extracting agar from Gracilaria Gelidiella comprising the steps of: washing a plurality of fresh Gracilaria Gelidiella with water to remove sea salts, attached shells, sand, dirt and other algae five times, sundrying and washing with freshwater of Gracilaria Gelidiella alternately once a day for seven days to obtain a dried bleached Gracilaria Gelidiella, soaking the dried bleached Gracilaria Gelidiella in freshwater with 1-2 pcnt citric acid for 12 hours, boiling the soaked Gracilaria Gelidiella in a casserole at 95-100oC for 45 minutes, pressing the boiled Gracilaria Gelidiella using a nylon bag to extract the agar, pouring the resulting agar into stainless pans, cooling the agar until it solidify, cutting the solidified agar into cubes, washing the agar cubes in water, packing the agar cubes in polyethylene bags.
