PROBLEM TO BE SOLVED: To obtain molded noodle snack cereal in which fragment-shaped noodles are bound with a binder so as to be molded into a prescribed shape, being easier to be eaten compared with the conventional one.SOLUTION: Provided is a method for producing noodle snack cereal comprising: a mixing step of obtaining a noodle-shaped mixture a molding step and a drying step. In the mixing step, the fragment shape of starch noodle, the fragment shape of wheat flour noodle and a binder solution including maltodextrin having a dextrose equivalent of 10 to 18 and oxidized starch at a mass ratio of the maltodextrin:the oxidized starch=50 to 99:50 to 1 to obtain a noodle-shaped mixture. The fragments of the starch noodle are produced using a substrate obtained by mixing non-pregelatinized starch, the main material composed of pregelatinized starch and water for a prescribed time. In the molding step, the noodle-shaped mixture is worked into a molded body having a prescribed shape. In the drying step, the molded body is dried.
